Double Crust Pizza

I really love this pizza, it’s like a whole meal in one piece. No need to eat the whole pizza by yourself one slice is very filling. The prep time may seem a little long, but while the dough is raising, you can cut up all the other ingredients. The wait is worth it.

As with any pizza, you can tailor the ingredients to your own taste as well as the sauce. This sauce is mild, if you like a more robust sauce just simply add more spices.

Ingredients
  • Crust:
  • 1 pkg active yeast
  • 1 c luke warm water
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 23/4 c flour
  • Sauce:
  • 2 lg (3-lb) cans Italian plum tomatoes
  • 1 small (3-oz) can tomato paste
  • 2 tbsp olive oil
  • 1-2 garlic cloves, chopped
  • Salt and pepper to taste
  • Oregano, parsley and basil to taste.
  • *This recipe makes enough for 2-3 pizzas). I let it cool then place it in freezer bags to be used later. Some can be set aside for dipping.
  • Filling:
  • 1 lb mozzarella cheese, shredded
  • 2 oz Parmesan cheese
  • Enough pepperoni to cover top of pizza
  • Green peppers
  • Onions
  • Sausage
  • (Filling can be catered to your own personal taste)
Instructions
  1. Crust:
  2. Sprinkle yeast in water and let stand 10 minutes. Add oil, salt and ½ of the flour; beat well. gradually add more flour. Knead for 10 minutes until smooth and elastic. Place in a greased bowl and cover with a damp cloth or plastic wrap. Let rise until double in size (approximately 11/2 hours).
  3. Sauce:*
  4. lg (3-lb) cans Italian plum tomatoes
  5. small (3-oz) can tomato paste
  6. tbsp olive oil
  7. -2 garlic cloves, chopped
  8. Salt and pepper to taste
  9. Oregano, parsley and basil to taste.

  11. Filling:
  12. Punch dough and turn onto floured board. divide into 2 balls (1 large and 1 small). Roll out the large ball and spread in a greased 9x12x11/2-inch or 12 inch deep dish pizza pan, with dough coming up sides of pan ¾ of the way. Add all of the mozzarella cheese, green peppers sausage and onions. Sprinkle with Parmesan cheese. Add top crust and pinch edges together. Bake near the bottom of the oven for 7 minutes at 450°. Remove from oven, add tomato sauce and pepperoni (you may add other topping to top of pizza). Place back in oven and bake for 25 minutes more at 400°. remove and let stand 10-15 minutes before cutting.
